C Jane's Pumpkin Pancakes

1 c. pumpkin
1 1/2 c. milk
6 T. butter, melted
1 T. vanilla
4 eggs separated
2 c. flour
2 T. baking Powder
1 T. sugar
1 T. cinnamon
1/2 t. nutmeg
1/4 t. coriander (I didn't have this so I left it out and they were still good)
1/4 t. salt

Syrup:
1/2 c. butter
1 c. buttermilk
2 c. sugar
2 T. corn syrup
2 t. baking soda

In large bowl whisk together pancake ingredients, mixing the wet and dry ingredients separately (except eggs), then mix together.  In a small bowl beat egg whites until stiff and then fold into batter.  Cook.

While cooking make the syrup.  In a LARGE saucepan combine butter, buttermilk, sugar and syrup.  Bring to a boil.  Remove from heat and add vanilla and baking soda.  Stir as fast as you can- it will foam a LOT.  Pour over pancakes.  SOOO YUMMY!
